It’s never not Garibaldi season.

I’m on my way to NYC tomorrow and I’m literally drooling at the prospect of having a true Garibaldi at Dante. In the meantime, I realized I had a watermelon I wasn’t going to be able to use before I left, so I wanted to see if it would taste alright in this riff.

This melon in particular was not abundantly sweet, so I decided to add the strawberry syrup to give the bitterness some balance and compliment the flavors — if you decide to try this, TASTE your melon. If it’s sweet enough, no need for anymore syrup.

While truly beautiful, I would probably add some acid next time to achieve some more balance.

 

Ingredients

0.33oz | 10ml strawberry syrup (optional, read above)

1.5oz | 45ml Campari, or an Italian red bitter

4.5oz | 135ml fluffy watermelon juice

 

Cocktail Directions

Add Campari into a glass, with syrup if needed. Top off with watermelon juice. Garnish with a watermelon slice.
