Okay, we disassembled the classic limoncello spritz and things got a little weird. I wanted to take the delicious Luxardo limoncello and combine some seasonal fruit into the blended portion of this cocktail.

I don’t care what you say, frozen cocktails are delicious—and we need more of them. And while everyone is crushing spritzes in this heat without judgment, I wanted to find a way to marry the two ideas in a fun experiment.

Knowing that frozen cocktails require a smidge more sweetness due to the extremely low perceived temperature, I also added strawberry syrup, fresh frozen strawberries, lemon juice, lemon zest and some xantham gum to tie everything together and bring out the flavors of Luxardo’s limoncello that take you right to Italy.

While also taking that silky, vibrant frozen cocktail and laying it over top a bright, crisp Prosecco.

 

Ingredients

2oz | 60ml luxardo Limoncello

1oz | 30ml strawberry syrup

0.5oz | 15ml lemon juice

100g frozen strawberries

100g crushed ice

1/4 tsp xantham gum

Lemon zest

Prosecco

 

Cocktail Directions

Combine limoncello, syrup, juice, strawberries, ice, zest and xantham into a blender, blend on high until texture is completely smooth.

In a glass filled with ice, fill 3/4 of the way with Prosecco, topped with finished cocktail. Garnish with a strawberry wedge.
