I’m excited to be partnering with Rabbit Hole this summer to explore the season through cocktails. First ingredient on my radar to kick off the series was pineapple — and since the grills have started firing up, I figured it was a great idea to incorporate one too!

 

Ingredients

(serves 6-8)

12oz Rabbit Hole Cavehill

12oz grilled pineapple juice

8oz fresh lime juice

4oz brown sugar syrup

Ginger Beer, to top off individual glasses

 

Cocktail Directions

Remove skins & slice pineapple into large wedges. Grill, flipping continuously, until all sides are charred and golden. Juice with a centrifugal juicer (if not available, you can blend and strain through a cheesecloth).

Combine bourbon, juices, and syrup into a large pitcher/dispenser with ice. Serve into desired individual glass with ice, topped off with ginger beer. Garnish with grilled pineapple wedge or lime wheel.
