Well, that was a doozy.

You ever have an idea for a cocktail that turns out nothing like you planned? That’s the story of this one.

After being inspired by my new YouTube series obsession called ‘Dirt’ produced by Huckberry, I wanted to try and emulate the most recent episode that dives into New Zealand.

Little did I know, I was about to head down a road filled to the brim with failures and lessons—I was on the verge of crashing out twice that last day.

The lesson: mistakes still end up being delicious.

 

Ingredients

6 whole passionfruit

150g Sugar

50g water

125ml Lemon juice

125ml Lime juice

500ml Gin, preferably local (I used las vegas distillery)

400ml whole milk

1 egg white

150g Passionfruit guts (about 6 whole passionfruits, gutted)

150g Sugar

50g water

 

Combine passionfruit and sugar into a container and store in the fridge to allow the sugar to begin turning into a syrup. Stir in water gradually while stirring until sugar fully dissolves. Strain out any remaining solids/seeds.

 
 
 
 

Passionfruit Punch Recipe

 

250ml Passionfruit syrup

250ml Lemon & Lime juice (1:1 ratio)

500ml Gin, preferably local

400ml whole milk

 

Combine syrup, lemon/lime juices, and gin. In a saucepan, heat whole milk to 180F, pour into a large container.

Gradually add punch into the vessel with milk, allowing curds to gradually form.

Set aside for at least 1 hour before straining through a cheesecloth to clarify.

 
 
 
 

PASSIONFRUIT CHEESE FOAM

 

4oz | 120ml cheese curds from clarification above

1 egg white

 

Combine ingredients into a iSi whipping container, charging twice with NO2 cartridges. Reserve in fridge for at least 30 mins.
