Holy. Shit.

Easily the best clarified punch I’ve ever made. Period.

Not surprisingly, I’ve had a few requests for this particular recipe. I wanted to approach this as a challenge to clarify using yogurt instead of milk—something I’ve never done before.

Another change was to opt for a strawberry syrup, and using that opportunity to create a powder — something I’ve never done before either. Nor was I properly equipped to do so.

But guess what? It all worked out anyway. What a ride.

 

How to Make a Clarified Jungle Bird

100ml strawberry syrup (recipe below)

100ml yuzu juice

300ml pineapple

150ml Campari

150ml Appleton Estate 21 Year rum

150ml Real McCoy 12 Year rum

300ml yogurt

Directions

Combine all ingredients as demonstrated in the video. Strain, and store in a preferred vessel. Make sure to stir over ice to dilute each serve.

 
 
 
 
 
 
 
 
 

How to Make Strawberry Syrup

250g sliced strawberries

250g granulated sugar

 

Let macerate in an air tight container for at least 72 hours. Strain out solids.
