At the turn of the new year, hosts of a respected podcast from Vine Pair decided to make a list of ‘Trends to Leave Behind’ for 2025, chief among the list was ‘clarification’.
They went on to explain that the technique was overused in most cases, superficially being abused to generate attention on social media. I agree that at times bars and social media figures may use it without merit, but to say that we need to leave the entire technique behind is a stretch.
Globally, it is one of the most common techniques I’ve seen utilized on menus in Top 50 bars & restaurants of every market. As there are a variety of ways to achieve it and impact flavor or drinking experience with it, the only thing I see is that this ‘trend’ is going to continue to refine and help tell better stories.

Ingredients
100ml earl grey syrup (recipe below)
100ml fresh lemon juice
100ml italicus
200ml cachaça, preferably with an amburana finish
200ml Froot Loops infused milk
Directions
Combine all ingredients and let curds settle for at least 4 hours, overnight preferably. Fine strain the milk punch through a cheese cloth, a process that will take a minimum of 4-6 hours to complete. Chill in the fridge once strained, serve over ice.

Combine into a saucepan, bring to a simmer and reduce until velvety as desired.
Fruit Loops Cereal Milk

cereal of choice
Combine ingredients, whip by hand or with a mixer to form a soft whipped cream.
