the best homemade olive brine

 

The addition of dry vermouth to this homemade olive brine makes it martini-ready — no extra vermouth required.

 

Ingredients

0.5 tbsp kosher salt

0.50oz | 15ml vinegar

2.75oz | 80ml dry vermouth

5.25oz | 155ml filtered water

340g castelvetrano olives

 

Steps

 

Rise olives clean. Add all ingredients except olives together and stir to dissolve salt. Add to olives. Store in the fridge for 24 hours to infuse.
