Coerced into my own version of the “Change My Mind” Challenge using Malibu Black thanks to the request (and payment) from a fan.
My inner basic bitch LOVES coconut, but I also love to hate on Malibu. It tastes like sunscreen and regret — but if there’s a will, there is a way.
By far one of my favorite guilty pleasure cocktails is a Painkiller. Using that as a template, I attempted to tame the beast that is Malibu Black using toasted coconut, sherry, and a funky high proof Jamaican rum.
While still sweet (as it should be), I actually genuinely liked this. A lot. Someone find me a beach so I don’t feel so bad about it.

Ingredients
0.75 oz | 22.5ml toasted coconut syrup
1 oz | 30 ml orange juice
1.5 oz | 45ml pineapple juice
0.25 oz | 7.5ml Wray & Nephew
0.75 oz | 22.5ml Amontillado Sherry
1 oz | 30ml Malibu Black
Cocktail Directions
Combine all ingredients into a shaker tin, add a half scoop of crushed or pellet ice, whip shake, and dump into a large pilsner glass. Garnish with pineapple fronds and shaved nutmeg.
