the chilcano cocktail

 

For the Pisco lovers out there.

Spirits of Latin America has been a great reference for me to dive into cocktails and history around some of my favorite categories on my bar.

I found this cocktail in the book Spirits of Latin America by Ivy Mix (it’s actually the cocktail shown on the cover). It’s effectively a buck/mule variation that was being served well before most modern versions we know today.

 

Ingredients

1 strawberry, muddled

0.75oz | 22.5ml lime juice

0.75oz | 22.5ml ginger syrup

2oz | 60ml quebranta pisco

club soda

 

Cocktail Directions

Combine strawberry, ginger syrup, lime juice, and Pisco into your tin, add ice, shake, and double strain into a collins glass with ice.

Top with soda water, stir to incorporate.

Garnish with a lime wheel, candied ginger, or a strawberry. Whatever floats your boat.
