You can never go wrong with a classic Bee’s Knees cocktail — the prohibition era gin sour that utilizes honey syrup for sweetness, giving it a nuanced edge.

This cocktail has been a staple of mine to show those who are skeptical of gin that it is, in fact, a delicious spirit. Just like the daiquiri, this cocktail is a foundational sour that allows you test any gin and give you an understanding how it works with citrus and sweetner.

I almost missed the fact that it was Bee’s Knees Week: a cocktail week started by Barr Hill out of Vermont to donate money conservation and children’s education efforts around all things bees. While I’ve not participated online in years prior (that I can remember at least), I have done so at bars that I’ve worked at and have always admired this charitable week.

 

Ingredients

0.75oz (22.5ml) honey syrup

1oz (22.5ml) fresh lemon juice

2oz (60ml) gin of choice

pinch of salt (optional)

 

Cocktail Directions

Combine all ingredients into a shaker tin, add ice, shake, and double strain into a chilled coupe glass. Garnish with an expressed lemon peel.
