tommy’s margarita

I was reminded the other day how f***ing good, yet equally simple this recipe is. Tommy’s Margarita, which was created by Julio Bermejo in the early ’90s at Tommy’s Mexican Restaurant, an institution that has been around since 1965. Just like the restaurant, this recipe has stood the test of time and has become a modern take on the classic.

Play around with the ratio of agave syrup and lime to adjust how sweet or dry you like it. I like mine slightly drier with a higher ratio of lime juice.

Ingredients

0.75oz | 22.5ml agave syrup*

1oz | 30ml fresh lime juice

2oz | 60ml Blanco or Reposado tequila

Cocktail Directions

*Make agave syrup by combining 2 parts agave nectar + 1 part water, stirring to combine.

Combine all ingredients into a shaker tin, add ice, and shake. Strain over fresh ice in a rocks glass dressed with salt on one side, garnish with a lime wedge or wheel.
