It’s time for the 5th Annual Margarita Challenge hosted by Cointreau. This year, the competition embraces sustainability with the mantra: from Fruit to Leaf.
This challenge is meant to push your creativity to honor both the planet and the palate. Your mission is to select a fruit and find a way to harness its full potential applying your knowledge and techniques to maximize flavor and minimize waste.
To explore this idea, I made a lime cordial utilizing every aspect of the fruit — zest, juice, and the lime leaves. It’s a bright and flavorful cordial that elevates the simple margarita spec and adds some subtle complexity.

Ingredients
Pinch of Maldon sea salt
30ml Lime Leaf Cordial (recipe below)
30ml Cointreau
45ml Tequila Blanco
Directions
Combine all ingredients into a shaker, add ice, then throw until properly chilled, diluted and aerated. Serve over a large block of ice, garnished with a lime leaf.
How to Make the Best Lime Cordial
2g lime leaf scraps
8g lime zest
30ml lime juice
25g citric acid
250g sugar
250g water
Blend all ingredients on high for 60 seconds, then strain your cordial through a coffee filter.
